Summary
Problem to be solved: To provide a defatted food ingredient obtained from rice germ; rice bran containing rice germ; germ rice; wheat germ; or wheat bran containing wheat germ, enriched with gamma-aminobutyric acid under certain conditions, wherein the free fatty acid contained therein is reduced to enable improvement in the flavors of germ foods and broad, comprehensive application in the field of food, encompassing aspects such as taste, digestion, cooking and processing, and management. Solution: The defatted food ingredient enriched with gamma-aminobutyric acid is obtained by extracting off, using n-hexane, lipids obtained from at least one of rice germ; rice bran containing rice germ; germ rice; wheat germ; or wheat bran containing wheat germ, and then immersed in water with a pH level of 2.5 to 7.5 and a temperature of 50℃ or less. It is also obtained by extracting off, using subcritical or supercritical carbon dioxide, lipids obtained from at least one of rice germ; rice bran containing rice germ; germ rice; wheat germ; or wheat bran containing wheat germ, and then immersed in water with a pH level of 2.5 to 7.5 and a temperature of 50℃ or less.
