Solution: (A) a carbonylation inhibitor containing glucosinolate as an active component; (B) the carbonylation inhibitor described in (A), wherein the glucosinolate is derived from broccoli seeds; and (C) the carbonylation inhibitor described in (A) or (B), wherein the glucosinolate is at least one selected from (1) glucoiberin, (2) glucoraphanin, (3) glucoalyssin, (4) glucohesperin, (5) glucosiberin, (6) glucoerucin, and (7) glucoberteroin. A dermis-yellowing inhibitor containing the carbonylation inhibitor described above as an active component.
